We like stuffed peppers but love this recipe even more! You get all the flavor, it's easier to store and reheat as leftovers, and you can use all sorts of sweet peppers, not just big uniform bell peppers.
Ingredients:
White or Brown Rice
1 lb Sausage - country-style or Italian
1-2 Onions - red or yellow
2-4 Sweet Peppers - 2-4 if using bell peppers, or the equivalent if using Jimmy Nardello, lunchbox, etc.
2-4 Tomatoes - if tomatoes aren't in season, you can use canned diced tomatoes instead
Greens - spinach, kale, or chard
Shredded Cheese - we prefer cheddar
Start off by cooking your rice and sausage. While they cook, chop up your onions, peppers, tomatoes, and greens. Heat up some olive oil in a skillet and add in your onions first. After they've started to cook, add in your bell peppers. Shortly after that, add the tomatoes and greens. Finally, mix in the shredded cheese and cooked sausage. Serve over rice!
