Beets are one of our favorite crops! We prefer to harvest them at a smaller size than you typically find at the grocery store because they are much more tender with thin skin that does not need peeled. Just wash them off and you're good to go! Perfect for roasting, adding to a salad, or pickling.
Beets are a member of the Amaranthaceae family and are close relatives of of swiss chard and spinach. The beet leaves are edible, with an earthy flavor similar to chard and spinach. Use them the same way! We like to add the baby leaves to a salad or chop up and saute larger leaves.
