This quiche is simple and can be made with a wide variety of ingredients so you can enjoy it regardless of the season!
Ingredients:
Pie crust
4 duck eggs - can subsitute 5 chicken eggs
1 c. whole milk
1 c. shredded cheddar
1/2 c. shredded parmesan - or your favorite "tasty" cheese
Salt - omit if using a salty meat like sausage or if your cooked veggies have been salted
Your favorite veggies/breakfast meat!
Start by preheating your oven to 350 and lining a quiche pan with pie crust (homemade is great but if I'm in a hurry, the basic store-bought kind works just fine).
In a medium bowl, mix your eggs, milk, and salt (if using) together, then stir in about half of the cheddar cheese. Layer your cooked meat/veggies** in the bottom of the quiche pan. Pour the milk/egg mixture over top of them. Cover the top with the rest of the cheddar cheese and parmesan. Bake at 350 degrees for ~50 minutes.
**This is one of my favorite dishes because it is so versatile and easy to customize. You can use whatever veggies/meat you have on hand. To keep a good balance, I recommend using one kind of meat (our pasture-raised sausage is my favorite) and 1-2 veggies. Some of my favorites are corn, spinach, kale, tomatoes (fresh or sun-dried), scallions, and yellow onion. This is also a great way to use up leftovers; I often saute a mix of kale, corn, and scallions to eat with dinner, then toss the leftovers in this quiche for an easy breakfast.
