Kohlrabi isn't frequently found in most kitchens but it's delicious and easy to use! Both the leaves and bulb are edible and pair delightfully in this simple side dish.
Ingredients:
Kohlrabi - any color will work
Yellow Onion
Garlic - fresh is best but powder is a fine substitute
Olive oil
Fresh dill
Seasonings - I usually go for basil or an Italian blend but you can get creative here!
Start by prepping your kohlrabi: wash it, chop up the leaves, peel the bulb and remove the roots, and chop up the bulb. Keep the chopped bulb and leaves separate and compost the peel and roots.
Heat a skillet and chop up your onion. When the skillet is heated, add the olive oil, onion, and kohlrabi bulb. Cook it for 10-15 minutes, then add your garlic, dill and seasonings. Then add in the kohlrabi leaves and cook until they're nicely wilted.
This makes a great side dish for any meal! Enjoy it with an omelet for breakfast or alongside your favorite protein at dinner.
