Spinach is related to swiss chard and beets and the leaves carry a similar earthy flavor. Besides being a solid salad ingredient, it can be sauteed with garlic or added to my favorite quiche. Spinach is not a fan of hot weather so we grow it only in the spring and fall and the plants are very delicate; last season one heavy downpour wiped out an entire bed.
