Kale is a staple crop for us that we try to have available all season long. After trying many varieties, we settled on growing just one favorite: Winterbor. It has a wonderful mild flavor and is just as good cooked as it is chopped up raw for a salad. We harvest kale while the leaves a smaller because they're much more tender than when allowed to grow to bunching size. Kale is a member of the Brassicaceae family, closely related to broccoli, cabbage, brussells sprouts, etc.
