Carrots

Carrots are one of our most popular crops! We primarily grow a variety called Tendersweet (although when we cannot source the seeds we substitute similar varieties) - the name says it all. These carrots are incredibly tender, sweet, and are packed with earthy carrot flavor. We harvest them young and they just need a quick wash before they're ready to use, no peeling required.

Carrots are a member of the Apiaceae family which also includes celery and parsley. You can substitue carrot greens in most situations that call for parsley! We also love to make a carrot top pesto and any excess greens that we can't use make a great snack for our pigs. In addition to our orange carrots, we also plant rainbow carrots several times throughout the season.
