A bright, colorful slaw packed with flavor and easily customizable!
Ingredients:
Radicchio
Cabbage
Carrots
Parsley - Can also sub in cilantro, dill, or another favorite fresh herb
Finely chop or shred your radicchio, cabbage, parsley, and carrots and mix them all together. The ratio is entirely up to personal preference- I'd recommend one head each of radicchio and cabbage, and then add in however much you want of carrots and parsley. Finish by mixing in the dressing below or your favorite coleslaw dressing.
Dressing Ingredients:
3/4 c. mayo
2 T. apple cider vinegar
1 T. mustard
1 T. maple syrup - the real stuff!
salt and pepper to taste
You may need more or less dressing depending on the size of your radicchio and cabbage heads. If you have extra dressing, keep it in the fridge and use it with other greens or in a pasta salad.
