Ingredients:
Carrots - I prefer rainbow carrots for the aesthetic but orange work great as well
Olive Oil
Honey
Salt
Preheat your oven to 400 and thoroughly wash your carrots but there's no need to peel them. If they're small, you can leave them whole but if they're larger, I prefer them sliced into rounds. In a bowl, toss the carrots with olive oil, a dash of salt, and a drizzle of honey. Spread them out on a baking sheet (they cook best if they're not stacked up or packed too closely) and cook them until they start to caramelize and get just a little crispy around the edges.
